This recipe was passed on by our Design Assistant, and it’s the perfect summer salad to accompany your meals!

Ingredients:

Dry Pasta (elbow, shell or similar)                 3 cups

Sliced Dill Pickles                                              ¾ cups

Cubed Cheddar Cheese                                 2/3 cups

Finely Diced White Onion                             3 tbsp

Fresh Dill                                                              2 tbsp

Pickle Juice                                                         ½ cup

 

Dressing:

Mayonnaise                                                       2/3 cup

Sour Cream                                                        1/3 cup

Cayenne Pepper                                              1/8 tsp

Pickle Juice                                                         4 tbsp

Salt & Pepper                                                    Dash to taste

Directions:

  1. Boil Pasta according to package directions. Run under cold water.
  2. Toss cold pasta with ½ cup of pickle juice and set aside. Drain pickle juice.
  3. Combine all dressing ingredients in a small bowl and mix well.
  4. Toss all ingredients in a large bowl. Refrigerate for at least one hour.
